I’ve never been a fan of fad diets, but am intrigued by the concept of the Paleo diet. I’ve adapted this “Semi-Paleo” lifestyle because I cannot commit to Paleo 100% (C’mon, I’m Asian-American and I will never give up my Jasmine rice!). I love discovering all of these new Paleo options. The versatility of cauliflower is seriously amazing; I will gladly replace mashed potatoes with mashed cauliflower any day, and I’ve loved potatoes all my life. My husband, who is essentially the rice king of the family (must have with all three meals) actually enjoys cauliflower “rice”… and the almond nut is simply delicious in every prepared way – whole and roasted, creamy as a spread, or finely ground as a flour substitute.
I’m not an expert on the Paleo diet, but I enjoy reading and learning about it. I love testing out my recipes in the kitchen and absolutely love writing about my experiences in the kitchen.
